Rosemary Garlic Potatoes
Rosemary garlic potatoes are a simple side dish that pairs well with almost anything. It’s one of my favorite ways to use up a bunch of fresh rosemary from the garden. It can easily be turned into a main dish as well.
When the garden is in full production during the last months of summer, it’s nice to have recipes on hand that will make it easy to use up all that produce! This recipe kills two birds (or maybe three!) with one stone depending on what you have growing in your garden. The three main ingredients are potatoes, rosemary, and garlic. I prefer to use red or Yukon potatoes, but you can use russet potatoes if you peel them.
How to Make Rosemary Garlic Potatoes
Ingredients
- 4 pounds red potatoes, diced
- 8 cloves garlic, minced
- 4 Tbsp fresh rosemary, chopped
- 1/3 cup olive oil
- 2 tsp salt
- 1 tsp freshly ground black pepper
Instructions
- Preheat oven to 375 degrees.
- In a large bowl, combine all the ingredients until potatoes are well coated.
- Transfer ingredients to a rimmed baking sheet and spread evenly into a single layer.
- Place baking sheet in preheated oven and bake for 15 minutes.
- Stir the potatoes and cook for 10 more minutes. Pierce with a fork to ensure potatoes are tender. If they are not tender, keep cooking at additional 2 minute intervals until tender.
- Turn on the broiler and broil 3-5 minutes until golden brown.
A Twist on Rosemary Garlic Potatoes
To turn this recipe into a main dish for my family, I add sliced sausage. This is such a quick recipe for a busy night and one that I know my kids will like!
Additional Ingredient
- 5 fully cooked chicken sausages, sliced into coins ( we use Aidells brand found at Costco)
Additional Instructions
- After cooking the potatoes for the first 15 minutes, take them out of the oven. Add the sliced sausage and stir in with the potatoes.
- Add the potatoes and sausage back to the oven and continue with the cooking instructions listed above.
