When you make sourdough bread weekly like I do, especially when I’m testing new recipes for my blog and YouTube channel, chances are you’ll have some loaves that you just can’t finish before they start to turn stale. Usually, this happens around 2-3 days after baking sourdough bread.
What do you do when the bread starts to dry out and harden? You have several options. Add your stale bread to a recipe that contains a fair amount of moisture and will add some moisture back into the bread, such as French toast casserole. You can turn it into bread crumbs to use in your next meatloaf. Another option is to turn your stale sourdough bread into sourdough croutons. Any option you choose is great because you won’t be wasting your beautiful sourdough bread even though it’s past its prime for eating by the slice.

Does sourdough bread get moldy?
Just like store bought bread and homemade yeast breads, homemade sourdough bread does eventually mold. While store bought bread can last weeks at room temperature before beginning to mold, due to its added preservatives, homemade yeast bread and sourdough bread will naturally be taken over by spores in the air and begin to mold much faster. However, homemade sourdough bread does last longer than homemade yeast bread and this is thought to be because it contains higher levels of acid and antifungal properties, all due to the good bacteria contained in sourdough.
What is the shelf life of sourdough bread?
Sourdough bread will last 5-6 days before it is too stale to eat. It will take another 1-6 days before it goes moldy. Source

- If you don’t have leftover sourdough bread to make your croutons, plan to start a loaf the day before you want to make croutons.
- You can use melted butter or olive oil in this recipe, but I highly recommend butter because it adds more flavor.
- For a golden, crisp texture on all sides of the crouton, flip the croutons over halfway through baking.

How To Make Croutons From Sourdough Bread:
Prepare sourdough bread a day or two ahead or use leftover sourdough bread. Try making sourdough croutons with honey oat sourdough sandwich bread or basil sourdough bread.
Preheat the oven to 375 F and line a baking sheet with parchment paper.
Next, cut your bread into 3/4 inch cubes and place in bowl. Drizzle with butter or olive oil and seasonings; toss to coat evenly.
Spread the bread cubes evenly on a parchment-lined baking sheet and bake for 15-20 minutes. Turn the cubes over once around the 8 minute mark so that the cubes turn golden brown on all sides.
Finally, remove the sourdough croutons from the oven and cool completely. Store in an air tight container for up to 1 week.
