Soft Cheddar Parmesan Sourdough Cheese Sticks Recipe

Sourdough cheese sticks are a soft sourdough bread topped with garlic butter, two cheeses and Italian herbs. These are delicious served with warm soup, a garden salad, or along with pizza. This is a great recipe the whole family will enjoy!

On a cold winter night there’s nothing cozier than curling up with a cup of warm soup alongside soft, cheesy breadsticks. In fact, I did exactly that tonight while watching the first college basketball game of the season. I’m not a big sports fan, but I do love rooting for my alma mater!

You’ll find these sourdough cheese sticks to be the perfect side to complete your meal. They’re a crowd pleaser too and would make a great appetizer, just like these Cheesy Pepperoni Stuffed Sourdough Pizza Rolls.

Tips for Sourdough Cheese Sticks:

  • This recipe calls for fed starter, which means you should feed your starter at least 4-12 hours before you begin making the cheese sticks. This will give your starter time to become active and bubbly and help the dough to rise.

Ingredients:

Sourdough Cheese Sticks Dough:

Active sourdough starter

Warm water

Sea salt

Extra virgin olive oil

Honey

All purpose flour or whole wheat flour

Garlic Butter Cheese Topping:

 Butter, melted

Garlic powder

Onion powder

One-half tsp basil

Oregano

Grated cheddar cheese

Grated Parmesan cheese

Tools You May Need:

Nonstick ceramic baking sheet

Stand mixer with dough hook

Solid wood rolling pin

Pizza cutter

How to Make Cheddar Parmesan Cheese Sticks:

The Day Before

Feed your sourdough starter 4-12 hours before you begin to make the dough.

In the bowl of mixer, first combine starter, water, sea salt, olive oil, and honey. Add the flour a cup at a time to the wet mix, just until the dough forms into a ball. 

Place the dough into a greased bowl and cover with plastic wrap. Put in a warm place to let the dough rise and ferment overnight for 12-24 hours.

The Next Morning

The next day, line a cookie sheet with parchment paper. Use a dough scraper to scoop the soft dough out into the center of the parchment paper. Using your hands or a rolling pin, spread the dough out into a rectangle ½ inch thick.

Using a pizza cutter or sharp knife, cut the dough into 12 cheese sticks. Cover the cheese stick dough with a towel and allow it to rise for 1 hour.

In a small bowl, mix together the melted butter, garlic powder, onion powder, basil, and oregano.  Just before baking, brush each cheese stick with the garlic butter seasoning. Sprinkle the grated Parmesan and cheddar cheese evenly over the bread dough. 

Bake the cheesy breadsticks in a 400 degree preheated oven for 12-15 minutes or until golden brown. If needed, cut through the melted cheese along your breadstick lines. For best results serve warm.

Storage:

Keep sourdough bread sticks in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 1 week. For longer storage, freeze in an airtight container. These can be reheated in the oven or microwave for a perfect snack anytime of day.

  • ½ cup active sourdough starter
  • 1 cup water
  • 1 ½ tsp salt
  • 2 Tbsp olive oil
  • 2 Tbsp honey
  • 3 - 3 ¼ cups flour
  • Garlic Butter Cheese Topping:
  • ¼ cup butter, melted
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp basil
  • ½ tsp oregano
  • 1 cup grated cheddar cheese
  • ¼ cup grated Parmesan cheese
